Ingredients:
- 1 medium sweet potato
- 50g feta cheese, crumbled
- 30g cherry tomatoes, halved
- 10g black olives, sliced
- 20g red onion, finely chopped
- 10g fresh parsley, chopped

- Salt and pepper to taste

Instructions:
- Preheat the oven to 200°C (400°F).
- Wash the sweet potato and pierce it several times with a fork.
- Place the sweet potato on a baking sheet and bake in the oven for about 25-30 minutes, or until tender when pierced with a fork.
- While the sweet potato is baking, prepare the Mediterranean toppings. In a mixing bowl, combine the feta cheese, cherry tomatoes, black olives, red onion, and fresh parsley.
- Drizzle the olive oil over the mixture and season with salt and pepper. Mix well to combine.
- Once the sweet potato is cooked, remove it from the oven and let it cool for a few minutes.
- Slice the sweet potato in half lengthwise and gently fluff the inside with a fork.
- Spoon the Mediterranean mixture generously on top of the sweet potato halves.
- Serve immediately and enjoy your delicious stuffed sweet potatoes.
