Ingredients:

  • 1 medium sweet potato
  • 50g feta cheese, crumbled
  • 30g cherry tomatoes, halved
  • 10g black olives, sliced
  • 20g red onion, finely chopped
  • 10g fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Wash the sweet potato and pierce it several times with a fork.
  • Place the sweet potato on a baking sheet and bake in the oven for about 25-30 minutes, or until tender when pierced with a fork.
  • While the sweet potato is baking, prepare the Mediterranean toppings. In a mixing bowl, combine the feta cheese, cherry tomatoes, black olives, red onion, and fresh parsley.
  • Drizzle the olive oil over the mixture and season with salt and pepper. Mix well to combine.
  • Once the sweet potato is cooked, remove it from the oven and let it cool for a few minutes.
  • Slice the sweet potato in half lengthwise and gently fluff the inside with a fork.
  • Spoon the Mediterranean mixture generously on top of the sweet potato halves.
  • Serve immediately and enjoy your delicious stuffed sweet potatoes.
