Ingredients:
- 100g of spaghetti
- 50g of pancetta
- 1 large egg
- 30g of grated parmesan cheese
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 1 tablespoon of chopped fresh parsley (for garnish)

Instructions:
- Cook the spaghetti according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a pan, heat the olive oil over medium heat. Add the minced garlic and pancetta, cooking until the pancetta is crispy and the garlic is fragrant.
- In a bowl, whisk together the egg, grated parmesan cheese, salt, and black pepper until smooth.
- Add the cooked spaghetti to the pan with pancetta and garlic, tossing to combine.
- Remove the pan from the heat and quickly pour the egg mixture over the spaghetti, stirring rapidly to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.
- Serve immediately, garnished with chopped parsley, additional parmesan, and more black pepper if desired.
