Ingredients:
- 1 large sweet potato
- 100g of black beans
- 50g of cheddar cheese
- 1 avocado
- 30g of sour cream
- 50g of salsa
- 10g of fresh cilantro
- 1 teaspoon of olive oil
- Salt and pepper to taste

Instructions:
- Preheat the oven to 200°C (400°F).
- Wash and peel the sweet potato, then slice it into thin rounds.
- In a bowl, toss the sweet potato slices with olive oil, salt, and pepper until evenly coated.
- Line a baking tray with parchment paper and arrange the sweet potato slices in a single layer.
- Bake in the preheated oven for about 20 minutes or until golden and crispy, flipping halfway through.
- Once baked, remove the sweet potato from the oven and layer the black beans and cheddar cheese on top.
- Return to the oven for an additional 5-7 minutes until the cheese is melted.
- Remove from the oven and top with diced avocado, sour cream, salsa, and fresh cilantro.
- Serve immediately and enjoy your loaded sweet potato nachos!
