Ingredients:

  • 1 large sweet potato
  • 100g of black beans
  • 50g of cheddar cheese
  • 1 avocado
  • 30g of sour cream
  • 50g of salsa
  • 10g of fresh cilantro
  • 1 teaspoon of olive oil
  • Salt and pepper to taste

Kitchen Tools Needed:

  • Baking tray
  • Parchment paper
  • Oven
  • Knife
  • Cutting board
  • Spoon

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Wash and peel the sweet potato, then slice it into thin rounds.
  • In a bowl, toss the sweet potato slices with olive oil, salt, and pepper until evenly coated.
  • Line a baking tray with parchment paper and arrange the sweet potato slices in a single layer.
  • Bake in the preheated oven for about 20 minutes or until golden and crispy, flipping halfway through.
  • Once baked, remove the sweet potato from the oven and layer the black beans and cheddar cheese on top.
  • Return to the oven for an additional 5-7 minutes until the cheese is melted.
  • Remove from the oven and top with diced avocado, sour cream, salsa, and fresh cilantro.
  • Serve immediately and enjoy your loaded sweet potato nachos!
