Ingredients:

  • 150g of digestive biscuits
  • 50g of unsalted butter
  • 100g of fresh raspberries
  • 80g of granulated sugar
  • 1 medium lemon (zest and juice)
  • 1 egg
  • 1 teaspoon of baking powder
  • 30g of plain flour

Instructions:

  • Preheat the oven to 180°C (350°F). Grease a baking dish with butter.
  • Crush the digestive biscuits and mix them with melted butter until combined. Press this mixture evenly into the base of the baking dish to form a crust.
  • In a mixing bowl, combine fresh raspberries, granulated sugar, lemon zest, lemon juice, egg, baking powder, and plain flour. Mix well until smooth.
  • Pour the raspberry mixture over the biscuit crust and spread evenly.
  • Bake in the preheated oven for about 25 minutes, or until the top is golden and set.
  • Remove from the oven and let it cool for a few minutes before slicing into bars.
