Ingredients:
- 150g of digestive biscuits
- 50g of unsalted butter
- 100g of fresh raspberries
- 80g of granulated sugar
- 1 medium lemon (zest and juice)
- 1 egg
- 1 teaspoon of baking powder
- 30g of plain flour

Instructions:
- Preheat the oven to 180°C (350°F). Grease a baking dish with butter.
- Crush the digestive biscuits and mix them with melted butter until combined. Press this mixture evenly into the base of the baking dish to form a crust.
- In a mixing bowl, combine fresh raspberries, granulated sugar, lemon zest, lemon juice, egg, baking powder, and plain flour. Mix well until smooth.
- Pour the raspberry mixture over the biscuit crust and spread evenly.
- Bake in the preheated oven for about 25 minutes, or until the top is golden and set.
- Remove from the oven and let it cool for a few minutes before slicing into bars.
