Ingredients:

  • 100g of all-purpose flour
  • 50g of unsalted butter, softened
  • 30g of powdered sugar
  • 1 small lemon (zest and juice)
  • 1 tsp of dried culinary lavender
  • 1/4 tsp of salt
  • 1/2 tsp of vanilla extract

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and powdered sugar until smooth.
  • Add the lemon zest, lemon juice, vanilla extract, and dried lavender to the mixture and mix well.
  • Gradually add the flour and salt to the mixture, stirring until a dough forms.
  • Once combined, turn the dough out onto a lightly floured surface and roll it out to about 1/4 inch thickness.
  • Use cookie cutters to cut out desired shapes and place them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and let cool on a wire rack before serving.
